Keto Cheddar Biscuits – September 2019

I havenโ€™t bakedย in a thousand years because when I last baked, my Banana bread turned out hard as a rock!

I was so embarrassed, thank God the children were still small that they probably didnโ€™t know better!

So Iโ€™ve started this Keto diet that my girlfriend Marisa swears by.

She started Keto earlier this year and lost friggin 20+ pounds!

I told her I love my baked goods and she said I still could enjoy them, with less carbs!

If that isnโ€™t inspiration, I donโ€™t know what it is!

She gave me this recipe and I stared at it for a while and as the fear in me started to take hold, I pushed it right far back where it came from and said to myself, Iโ€™m hell going to try it!

Preparation: 10 minutes

Baking:ย  14min

Recipe:

1 1/2 cup almond flour

1 1/2 cup shredded cheese

1/4 cup of cream cheese

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup melted butter

3 eggs

Instructions

Add all ingredients to one bowl

You can also add other spices

I added Cayenne Pepper!

Mix well and pour into muffin cups and bake at 400 degrees for 12-14 mins

Sprinkle with extra cheese and bake for another 2 minutes.ย 

Thats it!

Ps. Next time I will add bits of Jalapeno peppers and ham!
